Sometimes making a dessert is just too… easy. You know? Like, yeah, it’s a dinner party, I can bring a chocolate cake and some berries. But it’s not enough for me anymore. I need a theme. I need restrictions. I especially need design restrictions. So when I painted my nails pink, I thought “Girl… It’s pink dessert time!”
But then I thought to myself “this isn’t enough, I need more!” And as I walked through my front yard and wrestled with the overgrown pomegranate tree that keeps people from venturing all the way to the front door (thank you Mother Nature) I knew it was time to pick some of those voluptuous beauties and use them in my dessert.
I had a quick browse on Pinterest and turned up some cute looking recipes.

Anyway, it was a really great experience and I totally enjoyed baking.
One thing I did do, that I normally don’t, is follow the recipes. Except for the frozen vs freeze-dried debacle. Other than that I paid full attention, I got it right and everything came out beautifully.
For a while a few years ago I was such a cupcake maker that my sister tried to convince me to open a shop called Kirby’s Kupcakes. So, when my uncle invited everyone to a family dinner at his house it was only natural that I was elected to be on dessert duty.
And while the cupcakes were delicious I would like to give a special mention to the Strawberry Meringues. Not once but twice it happened that after someone bit into the little bite-sized piece of Heaven they pulled an ugly face and said “ugh! Kirby!” The jig was up. My desserts were a failure. Everyone will know that I’m out of practice. But in actual fact they were just so disgusted with how amazing these meringues tasted. Reports flooded in that they are the lightest, tastiest desserts going aound and I was even told that they taste like Clinkers. I apparently have to make them in other flavours ASAP.

Time: Maybe 3 hours of solid work (plus about an hour of waiting around)
Difficulty: (2/5) (Most effort went into working out the timing of two concurrent bakes)
Satisfaction / Pride Level: (4/5 – they looked cute and the Meringues were a HUGE hit. People think I’m amazing now!)
