Finally, one week late but better late than never, our time has come! It’s Orthodox Easter!!
In preparation I’ve had my own mini Bake Off and made a variation on some Ginger Biscuits I saw on the actual Great British Bake Off. I also made some Chocolate Cupcakes (shhh! I used a packet).
The biscuits were a rather easy bake, except for finding an oval/egg shaped cutter. Which I didn’t. They’re more like huge, weird teardrops. Let’s hope they don’t make anyone cry! Then came the icing. Royal icing in every colour, with piping bags everywhere! And a child hanging off my arms or sitting underneath me or even climbing onto my head. Needless to say, it was super easy and I excelled in piping the floral pattern.**
The cupcakes were even easier. Look, I was going for low difficulty and maximum effect here: I have a wedding the night before our Easter celebrations so I wanted something adorable but easy. I made the cupcakes out of the packet and then mixed up a batch of chocolate buttercream icing, which is a bit thicker than the icing from the packet. I piped the icing around the perimeter of the cupcake to make it look like a nest and then I plopped in a couple speckled chocolate eggs. I wanted adorable? I am giving you adorable!
While the biscuits aren’t explicitly Easter, they look the part and I would make them for any number of occasions. And the nests, well they’re Easter all the way and maybe they’ll my own new tradition… not as cool as my grandmother’s dyed red eggs, but cute enough.
